Apfelkuchen Rezept…

What Now Remains of the Apple Cake

As requested by several readers, I have posted the cake recipe that my host mother and I used to bake our apple cake below. For your baking convenience, I have also translated all of the measurements from the German measuring system into the American. The original recipe is also included, however, so feel free to check it out, and test your German! Guten Appetit!

Obstkuchen

Zutaten für den Kuchen:
200g Butter
175 g Zucker
1 Päckchen Vanillezucker
1 Prise Salz
3 Eier
200g Mehl
2 Teelöffeln Backpulver
2 Esslöffeln Milch

Zutaten für den Belag:
Obst (z.B. Äpfeln, Birnen, oder Kirschen)
2 Esslöffeln Zucker
2 Esslöffeln gehackte Mandeln

Zubereitung:
Butter und Eier schaumig rühren. Nach und Nach Zucker, Vanillezucker und Salz einrühren. Weiterrühren bis sich der Zucker gelöst hat. Mehl und Backpulver unterheben. Wenn der Teig fest ist, die Milch unterziehen. Der Teig soll schwer reißend vom Löffel fallen. Eine Springform (26 cm) einfetten. Den Teig einfüllen und mit Obst belegen. Ca. 50 Min. bei 180 Grad backen. 10 Min. vor Backende mit Zucker-Mandelgemisch bestreuen.

Translating the Measurements

German Butter Cake with Fruit Topping
Ingredients for the Cake:
2 sticks butter
¾ cup sugar
A tablespoon vanilla extract
A pinch of salt
3 eggs
1-½ cups flour
2 teaspoons baking powder
2 tablespoons milk

Ingredients for the Topping:
Fruit- apples, pears, cherries, etc. (enough to cover the top of the cake)
2 tablespoons sugar
2 tablespoons sliced almonds

Instructions:
In an electric mixer, mix together the butter and the eggs. Add the sugar, vanilla extract, and salt. Then, mix in the flour and baking powder. Continue to mix for five minutes (important step- insures that the cake is light and fluffy!) Using a spoon, add the milk into the batter. Pour the cake batter into a buttered spring-form pan, and arrange the sliced fruit on top of the batter. Bake the cake for 50 minutes at 355 deg. After 40 minutes, sprinkle the cake with the sugar-sliced almond mixture, and then return to the oven. Enjoy!

  2. I made the cake! It is a yummy light treat good for coffee time or even for Breakfast ;)! A few changes noted. Add 10 min bake time after adding almonds. Next time I'm going to try adding powdersugar to the almonds instead of reg sugar.. US sugar is too grainy vs German sugar. All and all YUM!
